step 1 :
Pour 3/4 tablespoon of oil into the tagine dish placed directly on
the stove or griddle.
step 2 :
When the oil is hot, add the meat and fry until golden brown on all sides (about 10 minutes).
step 3 :
Lower the heat a little and place the vegetables, washed and roughly
chopped, in a pyramid on top of the meat, from firmest to most tender
(potatoes, then carrots, then zucchini, then onions), interspersed
with cumin, spices, salt and pepper.
step 4:
Drizzle with a little water, sprinkle with yellow saffron for color
and place the green olives on top.
step 5 :
Cover and let's cook over low heat for 30 min.
step 6:
Place the chopped tomatoes on top of the cooked vegetables, cover
and cook for a further 15 minutes.
step 7 :
Serve hot, directly on the table, with tea and unleavened bread.
