Best Pancake Recipe Ever!

Pancakes…does this mean sweet or savory….

dessert or breakfast…

this one word can bring up so many different images in our minds.

I would like to share with you a recipe that has become quite famous not only in our house but with many of our friends as well!!

On the weekend it is a time to be able to slow down and enjoy a relaxing breakfast. Move away from the normal cereal and toast routine that quite often is identified with the work week. So when we get up on a Saturday morning we should be striving for something different, whether it is some Fluffy Spiced French Toast, any numerous styles of eggs, or pancakes.

This is an opportunity to spoil yourself with something special for you and your family without having to go out or spend hours in the kitchen cooking!

If you have kids...this is a really easy recipe to get them involved with as well. Even our 1 year old enjoys mixing the batter!

So without further delay, please find below my recipe for some of the best pancakes you’ll ever eat!

5 min prep | 5-10 min cooking time | SERVES 2
(Disclaimer: We normally will double this recipe in our house as they the pancakes tend not to last as long as you want them to! LOL)

Ingredients:
• 1 cup of plain flour
• 1 cup of buttermilk
• 1 egg
• ½ teaspoon of baking soda
• ¼ teaspoon of salt
• Pure maple syrup to serve

Tools needed:
• Large bowl
• Spatula
• Whisk
• Measuring cup
• Measuring spoon
• Crepe/griddle pan (make sure your pan has a flat surface for even cooking)

Place all ingredients into a large bowl and use a whisk to hand mix the batter. The important part of this process is to NOT OVER mix the batter. If you do this the pancakes will not be fluffy when they cook.

Pour some of the mixture onto the pan. The size of your pancakes is a personal preference so I’m not going to tell you how much here!

Cook until the top starts to bubble slightly and then flip with a spatula. You want both sides to be lightly golden brown. The pancakes should rise and be about 1cm / ½ in thickness.

Repeat until all the batter has been used!
