Italian Fried Gnocchi Recipe
Ingredients:
- 1 egg and 5 egg yolks
- 1 tbsp sugar
- 1 cup potato flour
- 2 cups whole milk
- 1 cup butter
- pinch each of nutmeg, cinnamon, and salt
- 1/4 cup all-purpose flour
- 1 cup fine dry bread crumbs
- 1/2 cup freshly grated Parmesan cheese
Recipe:
Beat the egg yolks in a bowl with the sugar until smooth. Place the potato flour in a saucepan. Gradually stir in the milk. Add the egg mixture, 2 tablespoons of the butter, the nutmeg, cinnamon and the salt. Mix well with a wooden spoon. Place the pan over medium heat and, stirring constantly, bring to a boil. Boil for 10 minutes, stirring all the time. Remove from heat. Turn the gnocchi batter out onto a flat surface. Using a spatula dipped in cold water, spread it out to a thickness of about 1/2 inch and leave to cool for 30 minutes. Cut the batter into 1/2 inch cubes or roll into marble-sized balls. Beat the remaining egg in a bowl with a fork. Dust the gnocchi with flour, drop them in the beaten egg, then roll them in the bread crumbs. Heat the remaining butter in a 12-inch skillet and fry the gnocchi until golden brown. Place on a heated serving dish, sprinkle with Parmesan, and serve
