White Choc Chip & Macadamia Cookies

White Chocolate Chip and Macadamia Cookies... Seriously does it get any better?

As a child growing up, these cookies were something I looked out for whenever I had the chance to buy a cookie. But not because they were my favourite and I wanted them, instead to make sure I didn't accidentally buy one and mistake those pesky macadamia nuts for chocolate!

Luckily, as I grew up I began to appreciate macadamia cookies more and more. This recipe is now my go when I'm craving something a bit sweeter.

This recipe is super simple to make and works great as a freezer cookie!

Freezer Instructions

Follow the recipe below up to the end of step 7.
At this point instead of putting the cookies into the oven you want to place them on a baking tray lined with baking paper and put them in the freezer for 1 hour.
Once the cookie dough is frozen you can transfer the cookie dough balls to a zip lock bag or reusable container. Remember to label and date your cookies so you remember what they are and when you made them. It can also be handy to write the cooking instructions on the bag too!

Cooking Instructions

Preheat the oven to 180C (350F).
Place your cookies onto a tray lined with baking paper and bake for 15-18 minutes, or until lightly golden.
Remove from oven and allow to stand for 5 minutes before transferring to a wire rack to cool.

Tips & Tricks

Tip #1

Make a big batch of these and store them in the freezer using the Instructions abo for a super simple snack!

Tip #2

If you want super flat biscuits press them down slightly with the palm of your hand before baking them.

You can also flatten them slightly before freezing them, so that they are nice and flat when you chuck them from the freezer into the oven.

Ingredients

  • 125 grams unsalted butter (room temperature)
  • 1 cup light brown sugar
  • 1/4 cup caster sugar
  • 1 egg (organic preferable)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 cup self-raising flour
  • 3/4 cup plain flour
  • 1 cup white chocolate chips
  • 1/2 cup macadamia nuts (coarsely chopped)

Method

  1. Preheat oven to 180 degrees celsius.
  2. Cream the butter and sugars in a bowl until light and fluffy.
  3. Add the egg and vanilla extract. Stir to combine.
  4. Fold in the baking powder and flours.
  5. Fold in the white choc chips and macadamias until just combined.
  6. Roll cookie dough into a cylinder shape and wrap with clingfilm. Refrigerate for 30 minutes.
  7. Roll 1tbsp portions of cookie dough into balls and place on a cookie sheet.
  8. Bake for 12 minutes or until slightly golden on top.
  9. Cool on wire rack.

These cookies turned out GREAT! The only thing I changed was that I used 1/2 teaspoon of vanilla

The cookies are delicious & easy. I add some chips & nuts to this little bit of dough
