There isn't really "courses" in Chinese dining, it's quite different from the western style with starters, main and desserts etc. Instead, you just order the dishes and they come as they're made. For the "main", I decided to try the Dan Dan noodles which are a very popular dish originating from Sichuan. It's spicy sauce is layered with preserved vegetables, chilli oil, minced pork, peppers and scallions and most importantly ground peanuts, all served over the noodles. This particular one was "dry" though often you can find noodle soups served in the same way.
