My Food Fight Friday, or in this case, fast food friday.

Let me begin by saying I did NOT FEEL LIKE COOKING today. I had gotten off my butt and gone to the pool (that's good, right?) when I got home, I was in the middle typing some replies and ☼POOF☼!
No internet. 6th time this week.
So rather than just going to the living room and resetting everything, I (GOD HELP ME) Called Customer Support 😱
They sent a tech out, which turned into a rather enjoyable hour or so.
He was a "wannabe musician" so while he was testing etc, we talked, I played guitar and piano.
He even (tho' he was only early 20's) knew many of the songs I play, and recorded me playing and singing "Something (in the way she moves)" by the Beatles. On HIS phone, so I don't have a copy.
I digress.
After I napped for an hour, I got up hungry.(even though I'd eaten an order of "Hash browns loaded" at a local eatery.)
So back to the food.
I had that pan from a couple of days ago, where I had cooked bacon (@bdmillergallery) and not having anything else in the fridge I wanted to cook, this would be quick. So I tossed in two slices of bacon in small pieces.
While that was browning. I cut up some veggies.

Green Zucchini squash and yellow summer squash (also left from last week, and the uncut yellow had to have almost half thrown away, rotted)

Tossing these into the pan, and turning everything over, then turning it down,yielded this:

Having stirred all this, covered briefly so it would cook down just a bit, I used some (for me) really good Balsamic Vinegar to deglaze the pan

Once I was plated (this isn't all of it, but I DID end up eating all of it 😜 )

I added the last of my roasted tomatoes from the Antipasto bar at Kroger

Then finished it off with some grated Pamesianno Reggiano

I'm guessing you went swimming at in indoor pool, even heated an outdoor one would be too cold. What's on the bottom of the pan, Jerry? Bacon or sausage? The mix of zucchini and squash with onions is one of my favorites to make since I was in my early 20s. I like fresh mushrooms added to the combination. Good to see you still have some Pamesianno Reggiano left. Enjoy your weekend! @jerrytsuseer

Good Morning Nina, if I had had mushrooms, they would have definitely been in there (I actually thought about that). The blackened stuff was indeed bacon. The pan was left covered on the stove for several days with the bacon fat and the burnt remains ON the pan from a bacon cooking, I just used it to start cooking today's offering.

I use that expensive cheese VERY sparingly @ninahaskin; being a hard cheese, it grates out nicely.
Thanks for stopping by! ♥ OH! Yes indeedy it is an indoor pool, at an "adult recreation center" less than 2 miles from here, and it was warm enough to be comfortable, until you climbed out. Then it was a rush to get dry and dressed
