Ingredients
- 1 cup couscous
- 1 1/4 cups boiling water
- 1/2 cucumber, diced
- 1/2 red bell pepper, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup black olives, pitted
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
Place the couscous in a large bowl, and pour the boiling water over it. Cover with a lid or plastic wrap and let it sit for 5 minutes.
Fluff the couscous with a fork and let it cool to room temperature.
In a separate bowl, combine the cucumber, red bell pepper, red onion, parsley, mint, feta cheese, and black olives.
