Ingredients:

4 cups corn kernels (fresh or frozen)
1 tablespoon olive oil
1/2 cup mayonnaise
1/2 cup sour cream
1 cup crumbled Cotija cheese (or feta cheese)
1 tablespoon lime juice (about 1 lime)
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper (optional for extra heat)
Fresh cilantro, chopped (for garnish)
Lime wedges (for serving)
Directions:

Prepare the Corn:

Heat olive oil in a large skillet over medium-high heat.
Add corn kernels and cook, stirring occasionally, until they are slightly charred and cooked through, about 8-10 minutes. If using frozen corn, cook until fully thawed and heated through.
Mix the Sauce:

In a large bowl, combine mayonnaise, sour cream, lime juice, chili powder, smoked paprika, garlic powder, and cayenne pepper (if using). Mix well.
Combine:

Add the cooked corn to the bowl with the sauce and stir to coat the corn evenly.
Serve:

Spoon the corn mixture into serving cups or bowls.
Sprinkle crumbled Cotija cheese on top and garnish with fresh cilantro.
