Quick and tasty gnocchi meal vegan

Hi you! Love gnocchi?

Who doesn't? no doubt hey are the best when fried (maybe not the healthiest though) crispy on the outside and soft inside - isn't that what we love the most? If you believe so too - keep reading.
For that amazing recipe you will need 15 minutes of your time so perfect for those busy days when you still want to enjoy something really tasty. So simple, easy, quick and tasty.

All you need is:
-1 kg gnocchi (2 packs)- make sure they are vegan (if you're not vegan do that anyway,because why not :)) you can also make your own
-2 tablespoons of olive oil
-250 g sun-dried tomatoes - roughly chopped
-150 gram sliced black olives - you can use halves and even whole once, doesn't really matter as long as they are there :)
-Green pesto- vegan version or make your own (put basil, spinach, lemon juice, pine nuts, garlic, olive oil, salt&pepper and blitz in the food processor)

To make it:

Cook gnocchi as stated in the package instructions and drain.

Heat the oil on the frying pan on the medium to high heat and put the gnocchi in, let it fry and do not mix. Let it fry a little without moving and once the bottom is crispy lift the gnocchi up and turn them gently so the other side gets crispy too - don't do it too early as they will just stick to everything.

Once they ready to your liking, slide them off on the plate and top with pesto, olives, sun-dried tomatoes and just mix on the plate.

Voila!

I just have to find where to buy gnocchi. I only orer it at restaurants!

I could only help you if you lived in uk :) but good luck finding them and if not you can always make your own - they are really easy to make, just time cosuming. But if you do not mind I bet they would be worth it at the end :) xx
