#Trotters / Paya
Ingredients
1 kg trotters, (paaye).
2 large onions.
2 large tomatoes.
2 tsp turmeric powder.
3 tbsp ginger garlic paste.
salt as per taste or 3 tsp.
20 long dried red chillies.
2 tsp roasted coriander seeds.
5 cloves.
1 stick cinamon and 1 bay leaf.
2 tbsp ghee.
juice of 1 lemon.
1/4th cup chopped coriander leaves.
1 tsp black pepper powder.
Method
add the cleaned and washed trotters in the pressure cooker.add 2 tsp salt, 1 tsp turmeric, 1 tbsp ginger garlic paste.
Add water enough to cover all the trotters.
add 1finely sliced onion and pressure cook till tender. Sometimes it takes a longer time. U can pressure cook again after checking if its undone.
Check the water level so that it does not burn…till it cooks prepare masala.
Add roasted red chillies, and coriander in a blender. Add turmeric, left over ginger garlic paste, 3 cloves and lil water .make a fine paste.add ghee into a kadai, add cloves , bay leaf and cinamon.add finely sliced onions.
Let it sautey till almond brown… do not burn.once onion turn brown add chopped tomatoes.
And add salt.when tomatoes gets tender add the red masala paste.
And sautey well.add in the cooked trotters and all its soup.
Add water enough to dilute if its very thick.this shoud b soupy consistency.check seasoning. Add salt, black pepper powder, lemon juice and half of coriander leaves. Let it simmer on low flame for 10mints.add the remaining coriander leaves mix well and turn off the flame.serve this soup hott,,as a soup, or gravy with rice, rotis, naan or breads…
traditionally it is believed that the paya soup makes wonders for the weak and under nourished.Its specially given during the post pregnancy period for the new born mothers.

#Bread_recepie.
Ingredients
1/2 cup wheat ata.
1/2 cup maida.
1 tsp instant yeast.
1 tsp salt.
1 tsp sugar.
3 tbsp olive oil.
Some flour for dusting.
3/4 th cup water. Or jus enough to make a sticky dough.

Method.
Add sugar into warm water and mix. Add instant yeast and let it rest for 5 mints in a warm place.
Mix salt and flour in the mixing bowl. Add the yeast when it has froth well.
Mix all the ingredients and knead into a sticky dough.
Add 2 tbsp oil and knead well for 10-15 mints.
Smooth the dough and let it to rise in a greased container. Cover with a cling. Let it proof for 1 hour.
Once it has doubled in size remove and punch to release all the air from dough.
Knead for 5 mints and again let it rise. For 10 mints.
Remove and add a tsp of oil and knead for 5 mints
Transfer the dough into a greased loaf pan.
Let it rest until rises or till 30 mints.
Brush a lil milk on top and put it into a preheated oven for 15-20 mints on 180Β°.
Once done remove and let it cool. Brush a lil oil on top.
Remove from tin slice it and serve.
As wheat flour is added it will not b very soft as only maida bread.
U can try the same with only maida. Or only wheat ata...
But this tastes good as well.
