Pinakbet with Bagnet

Today's lunch! :)
One of the most popular vegetable dish here in the Philippines is “Pinakbet”. It consists of eggplants, okra, squash, stingbeans, bagoong alamang (shrimp paste) or you can also use fermented fish sauce, and bagnet/pork.

How to cook Pinakbet?
This is how my mom cooked today's menu:

First, fry the bagnet and set aside.
Second, she put all the vegetables in the pan, poured some water, fermented fish sauce and spices (according to her taste), then just let it simmer for about 20minutes. Once vegetables are soft/cooked, put the bagnet and it's now ready to serve!
