Lox, Eggs & Onions

Here's a NYC deli classic breakfast - LEO - Lox, Eggs & Onions. To make this saute some chopped yellow and red onions in butter until they browned a bit, add whisked eggs, a bit of milk, salt and cracked pepper. Once the eggs thickened, add some chopped smoked salmon (lox).

Please note: Don't confuse this LEO with Unce Leo from Seinfeld.
