coconut chia pudding & 5-ingredient

Impress your family and friends with these delicious coconut and chia puddings topped with sticky mandarins and strawberries.

Ingredients


1/4 cup (60ml) agave syrup or maple syrup
2 mandarins, peeled, segmented
250g strawberries, quartered
1/3 cup (70g) white chia seeds
400ml can light coconut milk

Method


  • Step 1
    Mix the chia seeds, the coconut milk and 2 tablespoons of agave syrup or maple syrup in a medium bowl. Cover with plastic wrap. Refrigerate for 6 hours or until thickened.
  • Step 2
    Combine mandarin and strawberry in a bowl. Add remaining agave syrup or maple syrup and mix. Set aside for 30 minutes or until the strawberry releases its juice.
  • Step 3
    Place chia mixture between bowls or glasses. Garnish with the strawberry mixture.
