I expect to delegate a lot of this myself to the communities that have supported me since my beginnings here, and to continue to spread my now doubled upvote around. Coincidentally, I received this delegation on the very day my own SP hit 500, making it a very very good day on Steem for me.

Now onto the food!
I live mostly alone. My son is with me but he's the pickiest eater alive, even pickier than his father who had a palate full of super powers, and I cook to my son's taste, not mine, and usually only for him.
Most of MY meals are made from two or three of these foodstuffs: yogurt, bananas, blueberries, kimchi, avocado or sausage, and cottage, gouda, or feta cheese. Now and then I make cookies or cakes that most people would not consider sweet at all, forget about sweet enough.
Then came a terribly skimpy day in my usual food supplies. And I was hungry, very hungry. I had no choice but to cook for myself. Luckily, my career was in professional kitchens and I DO know how to cook, so I whipped up these two lovely dishes, both ready in a snap, and had myself a first class meal
Wild Alaskan King Salmon, pan-fried in ghee until crispy on one side, then flipped and cooked to a nice medium rare. I then removed the salmon from the pan, toasted some pine nuts real quick in the ghee left in it and took those out. Lastly, I reheated some already bean boiled thread noodles in the pan too. One pan, lovely dish.
I had taken my fridge apart searching for the preserved lemons I knew were in there, and this dish, while delicious without them, could have benefited from that extra little something. Of course I found those later in the day, right out in plain sight. Does this happen to anyone else?
For dessert, some watermelon with creamy buffalo feta cheese, garnished with the only fresh herb I had in the house, basil. So simple, super yummy.
(Note to self: find a better place than the cat perch to stage your food pix)

Bean thread noodles. Can be found in Asian markets and some natural foods stores. Gluten free but not GAPS/Weston Price approved. Probably not Paleo or plant paradox approved either. Vegan though!!! AND KIDS LIKE THEM! You boil up a whole package and pan fry them as needed. Last a loooong time in the fridge in the pre-boiled state.The organic ones are ridiculously expensive though. look for Roland brand.
My standard is to make a sauce of lots of butter (if using ghee add a tad of water or the whole thing sticks to the pan yuck) a splash of fish sauce and a good bit of soy sauce (or tamari or aminos), then heat the noodles up in the sauce. Quick and elegant addition to almost any meal. Impress your friends!

Watermelon & feta cheese! Ingenious @owasco! I am also known (among my family) as the cheese monster! Today, for dessert I had goat cheese with honey 😋 and guess what? After salmon for main dish! :)

I LOVE honey on cheese. Not on all of them, but when honey is right for a cheese, it is ambrosial.
I use butter with triple creme cheese though. I'm funny like that.

My autistic son has but a few foods he eats - chicken nuggets, chicken fingers, chicken fries, hot dogs, ice cream, and apples - so I'm very, very familiar with limited foods to work with too.
Watermelon is a staple of mine. I don't know what I'd eat without it sometime.

That's so cool that you won the delegation - well deserved by the way! And thanks so much for passing it on - that's awesome, and really helps with upvotes and bringing you challenges to win steem as well as just energy to keep us going! It's like a little power bar. When I lived alone with my son until he was 5 and I met hubby, I used to have a lot of quick meals like this. Miso soup with veg whilst he had fishfingers and veg, or quick noodle stirfries. I love preserved lemon! I'm thinking - hmmm... pomegranate, parsley, preserved lemon and rocket salad topped with salmon and sumac sounds good.... there's my lunch sorted!
