Howdy Janton, I am little bit overwhelmed with all the coments I have to reply, including yours , lol. I also posted new recipe and I gave to prepare post for tomorrow #marketfriday which I participate only occasionally. Only because Denise is my friend and she is great sport 😊
Anyway, aubergine is just a fancy name for plain old eggplant, lol. And vegan bacon can be made many different ways. But for you, I would recommend to go agsin with slices of portobello mushrooms, smoke liquid, salt, pepper sauteed on little bit of oil.

I enjoy replying to you Janton, I just wish I have more time. Nevertheless, when you add smoke liquid to a portobello mushroom, it tastes almost like bacon. Of course not exactly, lol. But it's delicious, healthy and cruelty free 😊
