Fruits and Veggies Monday--Using up the last of our tomatoes from the garden!

Since most of Georgia is holed up at home waiting for Irma to pass through our area, I have plenty of time to join in on the fun #fruitsandveggiesmonday challenge hosted by the fabulous @lenasveganliving.  With the history of this particular date in America and the crazy recent impact of Mother Nature (in the US and around the world), I am happy to see all of the other great entries in this challenge to brighten up a somber day!

Cooking by itself definitely brings me joy, but sharing food with others is where the real fun is.  I am thankful to have @dksart to share all of my meals with in person.  Finding more of you wonderful Steemians who enjoy plant-based cooking is an added bonus!  It is especially exciting to see what everyone is creating throughout the rest of the world!

In our neck of the woods we are finishing out the summer, so we are using up the last of the season's haul from the garden.  We are definitely not the most amazing gardeners, but we generally get a few good items out of each season.  This year was a better crop of tomatoes than we have had for the past few years.  Given the rain and cooler temperatures today, chili just seemed like a great choice to make with some of our tomatoes.

This is a vegan tempeh chili that even all of my non-vegan friends and family love!  As much as I would like to take credit for such an amazing recipe, it is not my own.  It is also one of those that is so good, I rarely make any changes to the base recipe.  If you want the recipe check out The Ultimate Tempeh Chili on The Simple Veganista blog.

Lovely tomatoes!!!

Luckily it was downgraded to a tropical storm once it hit Georgia, so we are not getting hit anywhere near as bad as the islands in the Caribbean or Florida. There are still a lot of trees down, flooding & power outages nearby, though. It seems to be winding down, so hopefully the people in need of help can start receiving it soon!
