It did NOT disappoint, obviously 😍🤌🌴Homemade fufu w/ jerk eggplant & bean stew, fried plantains, coconut kale w/ young coconut meat, fishless filets, mango & cilantro.

fufu- a dough made from boiled and ground plantain or cassava, used as a staple food in parts of western and central Africa. To me to tastes like a savory mochi!!

I used this brand in my kitchenaid mixer to get it real smooth! It's a blend of plantain, cassava and potato.

the curry is, and imo- is the main flavor of this dish😋 fufu just means the prep of the plaintain/yucca- I hear there are caribbean versions/preps of it as well!.

Recipe! I used this for the fufu- blending it in my kitchenaid with a paddle to get it real smooth! I then dropped it into a small bowl to form. The curry is made with sauteed onions, Jerk season paste, 1 can of chicpea, 1 can kidney bean, coconut milk & jerk eggplant.

Sautéed kale with coconut milk and young coconut meat strips. Then I fried up some local plantains, topped with green onion & cilantro. Everything was so delicious 😋

It's basically a fine powder of yuca & plantains- I tried by hand but it was too hard to get it smooth so I mixed it in the kitchenaid with a paddle and it worked perfectly!

so you use this flour instead of boiling/grinding plantains by hand? Asking bc I tried to make some Bolon de Verde and got very frustrated with trying to make the plantains a manageable paste.

the curry is! This is fusion cuisine😄 On another note, I did also buy the fufu powder from a Jamacian store. "It's eaten throughout the West African region and in several Caribbean countries including Haiti, Jamaica, Cuba and Puerto Rico."
