I run into this problem all the time. What I find to be the most common issue is that I'll burn myself out on a new title, and then struggle to find the desire to finish it. I've gotten better at sort of managing that obsessive need to play a game when I first buy it, and distributing it over a couple weeks of really fun play instead of like 3 days of grinding through a title. Does anybody else take this almost rationing stance to gaming now?

Yeah I definitely used to run pretty hard into that problem, and likewise now I take the time to distribute my time better over new releases and find them much more enjoyable rather than just 'something to get through'.
