We are having a great tomato and pepper crop this year.
It was time to get the first batch of Salsa done. A lot of work goes into jarring up salsa for the winter. Cleaning the seeds out of the Peppers and chopping them up.
Scalding and peeling the Tomatoes. And chopping the onions and Garlic.
We add vinegar and lemon juice to the mix so we don’t have to pressure cook them. We just do a water bath.
This batch we used Serrano jalapeño and cayenne peppers. Also lots of onion and garlic.
This batch made 28 pints. Hopefully we will get one more done this fall.
