Not sure why but the idea of overwintering pepper plants has never crossed my mind! Do you /anyone know about the difference in pepper production as the plants age? I wish they would just turn into giant fruitful pepper trees!

Oh.. the internet is abound with examples of how insane the production becomes as the plant ages. I saw one video of a man who overwintered two hot peppers of some kind and ended up with two buckets worth of peppers from two plants in early June! Woah!
I hope to see some similar results. Since my peppers already have massive tree trunk-like stems, all that energy stored inside to immediately begin fruiting, all they need is some more room to begin growing again.
They really do become “trees”. Their stems become woody and brown instead of green. And obviously the diameter of the stem continues to increase.. I’ll take a picture of the stem next time.

That is so absolutely cool! I would love to see the updates on those stems. I told a friend who grows peppers and the idea about knocked his socks off!
Makes sense since the plant can go a bit more dormant and give energy to the trunk instead of trying to start fresh each year.
Hopefully you get TONS of peppers! Hot sauce out the yazoo!
