No Canner? No problem! These quick and easy refrigerator pickles can be made with things already in your kitchen and are a great way to process a small harvest of cucumbers. This easy recipe only requires basic ingredients and no special equipment. Check it out!
Cucumbers are an easy vegetable to grow in any garden, even a container! We are a big fan of pickles, but for those without canning supplies or new to gardening, preserving them can be daunting... not anymore!

Recipe:
Per Pint Jar
Ingredients:
- 1/2 tablespoon salt
- 2 teaspoon sugar
- 1/2 tablespoon garlic
- 1/8 teaspoon whole black peppercorn
- 1/8 teaspoon mustard seed
- 1/2 head of dill
- 2" dill feather
- 1/4 cup white vinegar
- sliced cucumbers
- hot water - nearly boiling
Steps:
- Sterilize your jars and lids
- Put a pot of clean water on the stove to warm nearly to a boil
- Put the above ingredients (minus cucumbers and water) into the jar
- Pack the jar with cucumbers leaving about 1/4 inch of head space at the top
- Ladle in the hot water, covering the cucumbers
- Put the lid and ring on the jar
- Gently shake the jar to disperse the ingredients
- Place into the refrigerator and let sit in the brine for 2 days at least, shaking or mixing the jars a few times
Pickles are officially good for 6 months in this storage method.
