I've found spinach and lettuces too prone to bolting on my balcony. I guess I get too much sun.
What's worked well for me is herbs (basil, oregano, thyme, mint, etc.), vines (tomatoes and vining spinach) and hot/sweet pepper bushes.

Irregular watering can cause plants to bolt - plants in containers like spinach and lettuce need to be kept moist if in a hot area.
