Harvested beats today. These are one of my favorite vegetables and boy are they great for the body!

This is the raised bed we harvested from. Took about 60% from the bed and still have some that we will let get bigger.

Beets washed with both ends trimmed. When trimming you should cut both ends leaving about 1 inch from the beat. By doing this you will stop a lot of the bleeding when boiling.
After Boiling, the outer skin of the beat will basically slide right off.
We diced some of them. The others we just cut into 1/4 inch slices.
Vacumn sealing the beets will keep them good for up to a year. I promise you they will not last that long!

We put about 11 pounds in the freezer.
