It is a beautiful day in the Garden of Eden, and we are giving thanks for more than enough of everything in this abundant life of freedom!  

We made a delicious feast for our full time volunteers on our indoor wood burning stove rather than on the rocket stoves of our sustainable outdoor kitchen. We stayed nice and toasty, had a fantastic meal, AND heated water for showers for super sustainable efficiency. As usual, there was more than enough food for everyone, and we are happy to share our abundance with you!

We made a Mexican taco feast spread!

We love tacos! They're great for a crowd, because each person can prepare their plate exactly how they like it. Today we made chicken, quinoa, peppers and onions, cabbage slaw, bacon wrapped stuffed jalapeños, and a variety of tortillas and condiments for each person to enjoy. 

Our raw salad today was made of chopped cabbage, cucumber, red onion, cilantro, and a little bit of bell pepper and red tomatoes tossed in lime juice with salt. This made an excellent garnish for our tacos! 

We halved jalapeños and took out the seeds and membranes to cut down their heat. Then we stuffed them with cream cheese, and we wrapped the whole thing in a strip of bacon and cooked it until the bacon was crispy and the pepper was soft.

We made delicious and tender marinated chicken and sautéed it. This was a wonderful taco filling, or people could have it as a salad, or on top of quinoa.

We offered corn, flour, spelt, and blue corn tortillas for a variety of wrapping options.

We also made a pot of flavorful quinoa with rice! We cooked it with garlic, onion, and lime juice, and garnished it with fresh herbs for lots of flavor. 

We offered plenty of classic taco toppers for everyone to customize their dishes!

We had chips on the side with mild and spicy salsas, and creamy sour cream for dolloping. 

We also had a pickled relish with carrots, onions, and peppers. We like to have a variety of flavors, textures, and colors in each meal, and this relish adds a sour zing to our tacos!

We had plenty of cheese and creamy guacamole on service too! 

It was a beautiful fiesta of delicious, nutritious, sustainable food! 

Food is important, and we hope to inspire people to really take time to eat, enjoy it, and share it with someone you love. We also hope to inspire more and more sustainable practices in regards to food! 

We do all of our cooking over fire, using wood that was otherwise destined to end up in a landfill! This is our indoor wood burning stove in action - it cooks our food, warms our communal space, and heats water for hot showers all at the same time!
