It's the full season squash, let's enjoy :)
My dad picked up the Butternut in the garden, so I take full advantage of it: soups and gratins I love his sweet little taste with hazelnut flavor. Tonight I tested a recipe found on the net (but I do not know where!) A few months ago.
To make it tonight I had:
- 1 butternut
- 2 tablespoons olive oil
- 2 tablespoons hazelnuts
- 2 slices of Parma ham
- 50 grams of Gorgonzola
- Grated cheese
The recipe happens in two steps, start by preheating your oven to 180 degrees. Cut the Butternut in half lengthwise, and remove the seeds.
Brush the squash with a brush with olive oil and bake for 45 minutes.
Meanwhile, chop the hazelnuts and ham.
When the Butternut is cooked, dig it with a spoon, without scraping the edges too much. Mix the hot Gorgonzola puree and add the chopped ham and hazelnuts. Add salt and pepper.
Stuff the butternut with the mixture, sprinkle with grated Gruyere and bake under the grill for 10 minutes.
