Ingredient list:
6 chicken thighs (bone in, skin on, for maximum flavor. use chicken breast for maximum health)
3 tablespoon of olive oil, separated
2 limes – juiced and zested
cilantro – 1/4 cup chopped fresh
garlic – 3 cloves minced
cumin – 1 teaspoon
honey -1 tablespoon
1/2 teaspoon chili powder
1 teaspoon salt
1/2 teaspoon black pepper
Step 1
Make the marinade:
2 tablespoons of oil, lime juice and zest, chili powder, garlic, honey, salt, pepper, cilantro. Whisk or food process until combined.
Step 2
Marinade the chicken:
30 min to 1 hour in the fridge
Put the chicken in a shallow dish, or bowl and marinade, turning the chicken to cover both sides.
Pull chicken and let it get to room temp (10-15 min).
Step 3
Preheat to 425°
Step 4
Brown the chicken:
Heat oil in an ovenproof skillet (cast iron is best) and brown the chicken thighs skin-side down until golden (5-6 min). Flip, cook for 2-3 min
Step 5
Bake the chicken:
Transfer the skillet to the oven and bake the chicken thighs for 15-20 minutes or until the chicken is cooked through.
Pull the chicken when fully cooked (160 internal temp), and let rest 5 minutes.
