That's a good way to save some money and lower ROI times! What you might also do, is like you said, go into the motherboard bios and set boot to power on. Then, plug the ATX power supply and the Server PSU into a surge protector and flip the switch on the power strip. Then you don't have to manually switch both on, there is only one switch.
