Duel extraction Chaga Tincture

So it is time to make our duel extraction chag Tincture We start with fresh chaga mushroom, always wild harvested right here in Alaska. Clean all the bark off the mushroom and split it into 1/2” to 1 inch chunks. Dry your chaga we use the wood stove or oven on lowest setting over night

Once it is totally dry grind it in a coffee grinder, the finer the better. Now place the ground chaga in a jar leaving about 1” headspace.

Now this is different than our normal tinicure use the highest proof alcohol you can buy where you live. I can only get everclear 151 proof. So pour your alcohol in the jar leaving a 1/4 inch headspace. You will have to use a butter knife or something to get the alcohol to cover all the powder. It should resemble mud.

Now you let it sit away from direct light for at least 30 days. Shake your mixture every few days, or more can’t hurt. My target is normally 45 days of soaking.

Now it is time to strain off the alcohol. I use 3-4 layers of cheese cloth over a bowl. Pour your mixture into the cheese cloth, over s bowl, and squeeze all the alchol you can out. Save the grounds and place them in a sauce pan. Fill you jar with water and pour it over your grounds.

Set you alchol extraction in a airtight container to reduce evaporation, preferably glass. Now simmer your grounds till half the water has cooked off, avoid boiling. Let it cool and add one more jar of water. Again simmering till about half the water or a little less is left. I have found the magic number for me is 3 simmering.

Now let the simmered liquid cool. Once it is cooled you can strain it with cheese cloth like earlier. After it is strained mix the alchol and water extractions together. Make sure that there’s not more of the water extraction. You need to keep the alchol percentage over 30% or 60 proof. A perfect mix should land you in the 38% or 76 proof area.

Now place you extraction in bottles. I prefer 2oz Boston bottles with droppers. But the container you place it in should be tinted and if you plan on storing it for extended periods of time put it in the fridge. Also store away from direct sun. I pilot it in a cabinet for the one we are using.
