Ingredients
ghee
2 chicken breasts
Salt
Ground black pepper
1 mango
1 cucumber
1 red onion
½ package of spinach
8 Cherry Tomatoes (optional)
1 handful of raisins (optional)
1 handful of cashews (optional)
For the dressing:
1 tablespoon curry
1 tablespoon ground ginger
1 unsweetened Greek yogurt
Salt
Ground black pepper
1 lime in juice
Step by Step
The first thing we have to do is heat a pan with a tablespoon of ghee and brown two chicken breasts, seasoned to taste on both sides. When they are golden we reserve them.
Next we prepare the dressing for the salad. In a bowl we mix a tablespoon of curry with a tablespoon of powdered ginger, a Greek yogurt without sugar, salt, ground black pepper and the juice of a lime. We move well to mix all the ingredients and reserve
Next we peel a mango and cut it into cubes on a wooden board with a sharp knife. Then we wash and slice a cucumber and a red onion into very thin slices.
Mix the three ingredients in a bowl and add the chicken cut into strips and half a package of fresh spinach. We add the dressing.
Note: To accompany you can add whole yellow cherry tomatoes, a handful of raisins and cashews.
