When we think of healthy food we think it has to be fresh or raw. We put in effort to shop where the fruit and vegetables are fresh. Effort into growing a garden to produce healthy food. Sometimes fresh isn't always the healthiest form of food.

This is the case with garlic.

Starting out with organic garlic is very healthy. Aging garlic is even MORE nutritious.

Here is why...

By extracting and aging garlic the antioxidant levels increase. The stronger antioxidants contained in aged garlic have more bio-availability. A side benefit is in this conversion garlic's odor generating compound allicin is reduced. Producing a product without the powerful smell of raw garlic.
