How about a healthy dip for Super Bowl Sunday?

Does Fajita Chicken Dip sound good to you? It does to me. How about a healthier version? You're welcome :)

FAJITA CHICKEN DIP-Serves 4
1 1/2 c. cottage cheese
1 Fajita Seasoning / low sodium taco seasoning mix
2 cups canned diced tomatoes w/ green chilies
12 oz shredded chicken breast
2 tsp lemon or lime juice
4 oz cheddar cheese, shredded
1 cup each, raw cauliflower, celery, green & red peppers
Olives
Scallions
PREPARATION:
Blend cottage cheese in a food processor until smooth, scoop into a mixing bowl. To the mixing bowl add chicken, fajita mix, tomatoes and lemon juice, mix together. Transfer mixture to a baking dish. Top with cheese and bake at 375 degrees for 25-30 minutes. Garnish with scallions and olives. Serve with non-starchy veggies for a low-glycemic, clean meal. (Pictured below is the recipe doubled)

Very good post. Thanks for the recipe. I'm not a good cook, so I'll probably just do Doritos. I'm not much into the Super Bowl this year. When the best thing about the SB is the commercials, well...I'm going to watch ComicGirl19's book club instead.

@theninthart, II don't have a team in this battle, but I'll watch. I've also been disappointed in the commercials the last few years as well. I hope they have some good ones this year.

Actually, I'm not disappointed in the commercials. I've started to be disillusioned about the game. However, I decided to watch it today once I realized that the Eagles were winning. I am so sick of the Patriots.

Haha! You and 98% of all football fans! It was a very good game. I don't enjoy them when the score is lopsided.
