I went to the farm market yesterday and bought some delicious beets. They looked so nice and fresh that I could not resist buying them! Beets are very good for you and offer many health benefits! Beets are a root vegetable that have many important vitamins and minerals! The beetroot contains A, C, B and B vitamins and is an excellent source of calcium, potassium, magnesium, manganese, and fiber. It contains compounds that support detoxification in the body and can help strengthen the immune system. Beets can help to lower cholesterol, lower blood pressure, fight inflammation, fight cancer, lower risk of heart disease, improve mental health and digestive health. Beet greens contain vitamin K, which is necessary for healthy blood, strong bones, and preventing heart disease. They also contain a high amount of A, C, and B6 vitamins as well as potassium, manganese, iron, and fiber. Beet greens are a known source of lutein, an antioxidant which assists in protecting the eyes from age related macular degeneration and cataracts.
Boil the beets until they are soft.
Take the skin off under the running water.
These delicious looking beets are ready to eat! I like to add red wine vinegar and wishbone Italian dressing and marinate. It's like eating candy! It will keep for weeks in the refrigerator.
Beetroots and can be enjoyed hot or cold. You can include them in salads, soups, smoothies and meals.

I've been eating so many beets lately it's a wonder I haven't turned purple! Love them, and you are so right--they are amazing for you. I know some people do not love them, but there are so many different ways to prepare them there's bound to be a way to sneak them in to your diet. Thanks for the informative post! :)
