There are many benefits to vegetable juices as a way to optimize your overall health. Few main reasons:

The first reason is that vegetable juices allow you to consume an optimal amount of vegetables. Virtually all health experts recommend consuming six to eight servings of fruits and vegetables a day. Juicing is a simple way that pretty much guarantees that you will reach your recommended daily vegetable intake.

The second reason is that the vegetable juices help absorb all the nutrients from the vegetables. This is important because most of us do not have the best of food, as a result of our poor food choices over many years. This limits the body's ability to absorb all the nutrients from the vegetables. By taking the vegetables in the form of juice you will help to "pre-digest" them so you will receive most of the beneficial nutritional properties of these.

The third reason is that you can add a greater variety of vegetables to your diet. Many people eat only a few salad greens a day. This violates the principle of food rotation and increases your chances of developing a food allergy. Also, limit the number of phytochemicals in your diet, as each vegetable offers unique benefits. With juices, you can incorporate a wide variety of vegetables that you would not normally eat in their whole form.

Plus, juices can help boost your immune system by loading it with concentrated phytochemicals. When your body has plenty of the nutrients it needs and your pH is optimally balanced, it gives you more energy.

Focus on green juices and not fruit juices. It is very important to make this distinction because if your juice contains a lot of fruits, it will be both high in calories and high in sugar (fructose). You can add an apple to flavor your juice, but it must be combined with organic vegetables such as spinach, celery, kale, chard, etc.

If you're new to vegetable juices, you can start with dark leaf lettuce, romaine, spinach along with parsley and cilantro. Green vegetables like kale, chard, and mustard greens are a bit more bitter, so you should go slowly, adding a few leaves at a time.

If you want to make your juice taste more pleasant, especially if you are just starting to consume green juices, you can add half of all of the lime or lemon for each liter of juice. They work by cutting off bitter flavors and lowering the pH of the drink. Another option is to add fresh ginger that will give us a small explosion of flavor.
