So I am always experimenting with different, healthier versions of flour for baking. I came upon this Cassava flour which is made of Cassava or also known as Yuca root. I read some interesting facts about yuca root so I really wanted to try it. Before I tell you more... here are a few topics of the benefits:

Due to my husband's surgery I wanted to give him foods that could promote wound healing and growth! So my first attempt was making chocolate chip cookies. I would post the recipe but I haven't quite perfected it yet. I found that yuca root flour or Cassava Flour is a flour that is what I call liquid starved or dry! I will figure this out though! The cookies had a nice taste and yes my husband ate them all. His comments were that although dry (they crumbled easily) he liked the nutty taste. He said kind of like pistachio taste. I thought it was more like cashew tasting. He liked the added flavor. I will post later once I figure this out. I also want to see how it does with fried chicken!
