I almost caved and went out to eat but thought I can do a meal in under 30 minutes!
Ground beef with rice and green beans!
I think we forget that meals are to nourish not necessarily to just indulge. I know I haven't posted lately but teaching school is time consuming especially when your daughter is in high school sports. I have been eating well for the most part. So this meal is rice which takes about 20 minutes. I add stuff to my rice like apricots, cilantro, or cook it in coconut milk. It just tastes better than adding butter. I then browned some grass fed ground beef with onions. Next I took a bag of frozen green beans and cooked them. After all is done, pile it in a bowl. Yummy, simple, delicious, and fast.
