La cachama es un pez de agua dulce, de la familia de los carácidos, a la que pertenecen los caribes, los morocotos, las palambras y las palometas. El grupo de peces vinculado a la familia Characidae posee el mayor número de especies de peces de agua dulce en Venezuela y en los países vecinos, pertenecientes a la Cuenca Amazónica. por otra parte, muchas de ellas son especies de valor comercial.
Es un pez de gran tamaño y posee abundante carne para su consumo. Puede llegar a tener 18 kilos un espécimen adulto, y esto ha sido considerado muy rentable en la producción cuando se establece una finca que posea recursos hídricos suficientes para que resulte en un ingreso económico considerable sin tener gastos excesivos.
Existen muchas maneras de preparar este exquisito pez aunque a nivel local siempre existirán recetas muy emblemáticas que le otorgan un sabor pueblerino, además de darle un sentido regionalista a este subestimado recurso de la alimentación.
