On the way to full condition.
Some food products go a long way before they reach the condition and become what can be called food or even more so a delicacy.
For example before smoking fish on beech sawdust I salt it in salt and spices and this stage takes three to four days.
In theory even in this form the fish can already be eaten but if you want to get an unrivaled taste and aroma you should not rush.
Although someone thinks otherwise evidence of this are the timid people who like to eat unripe fruits lol.
In this photo the fish is on the way to full condition before smoking.
