Iftar and sahur in Ramadan mean tables that are prepared with meticulous attention and are equipped with foods where the prominent flavors of the region we live in are more preferred.

Especially the Ramadan special pitas made in stone ovens taste great. I would like to tell you about our adventure to get one of the flavors made in the stone oven again.

When a bakery is mentioned in Bursa, two or three historical bakeries come to mind, one of which is Abdal Simit Fırını. One of the classics of the month of Ramadan is to go to abdal square for sahur on the weekend, go to abdal square, buy bagels from the bakeries there, pour tea from one of the tea stoves around, wait for sahur and make sahur in a place where the spirit of Ramadan is lived to the fullest.

Before the end of Ramadan, we decided to buy our warm bagels for sahur, come to your house and make our sahur, and we went to the bakery at 01.50 at night. I was shocked at the sight I saw as I climbed the stairs towards the square where the bakery is located. It's like all Bursa has come to the Saturday night contract and to buy bagels at the bakery.

While we were thinking that we went early, we switched to the view we encountered and the thought of why we were so late. We barely found the end of the bagel queue, there were probably 250-300 people ahead of me. Since it was only two and a half hours before sahur, we thought with positive thinking that our turn would easily come in a short time, and we started to wait.

People who came early and bought their bagels had already started to make their sahur. ☺️

When we got tired of standing while waiting for a bagel order, we changed the guard with my brothers and after an hour of waiting, we were able to see the bakery from afar🙃. As the sahur hour approached, those who despaired that their turn would come, started to leave the queue one by one, but there were people who were added to the queue as much as those who left. Tired of waiting, my brother went to the front of the line and kept checking to see what the latest situation was. There were those who waited for two and a half hours and got their bagels, thank God we did not wait for two and a half hours, but we waited for almost two hours. Shortly before sahur, we came home and made our sahur. ☺️

I would like to inform you about the history of the bakery where we wait in line to buy bagels.

In 1969, bagels began to be cooked on wood fire in this oven. According to the researches, the history of the oven goes back hundreds of years. It is said that Osman Gazi had a connection with Abdal Mehmet, one of the dervishes who was with him before and after the conquest of Bursa. In those days, loaves of bread were baked in the oven. There is Abdal Mehmet Tomb opposite the place where the bakery is located.

The bakery, which has such a history, has become the brand of Bursa and its bagels have a completely different taste. That's why, not only during sahur in Ramadan, but on any day of the week, they get in line to get their bagels for this delicious taste. If we come to our sahur evening, we both experienced this beautiful atmosphere and fed our souls and our stomachs with the bagel we bought at the end.☘️

Ramazan ayında iftar ve sahur özenilerek hazırlanmış, yaşadığımız bölgenin öne çıkan lezzetlerinin daha çok tercih edildiği yiyeceklerle donatılmış sofralar demek.

Özellikle de taş fırınlarda yapılan ramazana özel pidelerin tadı harika oluyor. Sizlere yine taş fırında yapılan lezzetlerden birini almak için yaşadığımız macerayı aktarmak istiyorum.

Bursa'da fırından bahsedildiği zaman akla iki - üç tane tarihi fırın gelir bunlardan bir tanesi de Abdal Simit Fırını olur. Ramazan ayı klasiklerden bir tanesi haftasonu teraviden çıkıp sahur için abdal meydanına gelip oradaki fırınlardan simit alıp çevresindeki çay ocaklarindan bir tanesinden çay soyleyip sahuru bekleyip ramazan ruhunun doyasıya yaşandığı yerde sahur yapmaktır.

Bizde ramazan bitmeden sahur için sıcacık simitlerimizi alıp evinize gelip sahurumuzu yapalım dedik ve saat gece 01.50 de fırına gittik. Fırının bulunduğu meydana doğru merdivenlerden çıkarken gördüğüm manzaraya şok oldum. Sanki bütün Bursa cumartesi gecesi sözleşmesi ve fırına simit almaya gelmiş.

Biz erken gittiğimizi düşünürken karşılaştığımız manzara ile neden bu kadar geç kaldık düşüncesi geçiş yaptık. simit alma kuyruğunun sonunu güç bela bulduk, önümde muhtemelen 250-300 kişi vardı. Sahur saatine daha iki buçuk saat olduğu için pozitif düşünceyle sıranın kolaylıkla kısa sürede bize geleceğini düşündük beklemeye başladık.

Erken gelip simidini alan kişiler sahurunu yapmaya başlamıştı bile. ☺️

Simit sırasında beklerken ayakta durmakta yoruldugumuz zamana kardeslerimle nöbet değişimi yaptık ve bir saat beklemenin sonunda fırını uzaktanda olsa görmeye başardık🙃. Sahur saati yaklaştıkça sıranın kendisine geleceğinden ümidini kesenler birer birer sıradan ayrılmaya başladılar ama sıradan ayrılan kadar sıraya eklenenlerde vardı. Beklemekten sıkılan kardeşim sıranın ön taraflarına gidip son durum nedir diye kontrol edip durdu. İki buçuk saat bekleyip simitlerine kavuşanlar vardı, biz çok şükür iki buçuk saat beklemedik ama iki saatte yakın bir süre bekledik. Sahura az bir süre kala eve gelip sahurumuzu yaptık. ☺️

Simit almak için sıra beklediğimiz fırının tarihi hakkında bilgi aktarmak isterim.

Bu fırında 1969’da odun ateşinde simit pisirilmeye baslanmıştır. Yapılan araştırmalara göre fırının tarihi yüz yıllar öncesine dayanmaktadır. Osman Gazi'nin Bursa'nın fethinden önce ve fethinden sonra yanında bulunan dervişlerden Abdal Mehmet’le bağlantısı olduğu söylenir. O dönemlerde fırında somun ekmek pişiriliyormuş. Fırının bulunduğun yerin karşısında Abdal Mehmet Türbesi’nin bulunmaktadır.

Böyle bir tarihe sahip olan fırın Bursa'nın markası haline gelmiştir ve simitlerinin bambaşka bir tadı vardır. İşte bu yüzden sadece ramazanda sahur vaktinde değil, haftanın herhangi bir gününde bu güzel tad icin sıraya girip simitlerini alırlar. Bizim sahur aksamimiza gelecek olursak hem bu güzel atmosferi yaşayıp ruhlarımızı ve sonunda aldıgimiz simitle midelerimizi doyurduk.☘️
