I'd like to share something I had during the semana santa.
This is the Ube Sticky Rice with cheese on top...or as we call it, Ube Cheese Biko.
Paired it with my cold mochalicious drink.
The usual Biko is not purple. It's usually brown as it is a sticky rice cooked with latik (coconut cream and brown sugar). Ube is a purple yam which is why this Ube Cheese Biko is purple too.
