Sekuwa is found in every corner of Kathmandu street and is very popular food. Its the cheapest meat item that you can have. One of the stick (as shown in the picture) costs about 0.3$. It depends on which meat you are having- beef, mutton, lamb or pork.
The boneless meat is combined with various spicy ingredients and then stirred thoroughly in a dish. Then they are put into the stick especially a non-rusting metal one.
Then it is left under a medium heat which is obtained by burning natural woods (charcoal) for some time. You have to make sure the fire must be uniform over all the surface of meat so it is cooked properly- not on side cooked the other side raw.
I had this sekuwa in Sundhara, Kathmandu where typically Muslim people sell this at street. I must say Muslim people are so talented in making meat items here in Nepal whether it be curry, biryani or tikka.
