Suddenly I've found myself with 2 vegetarian girls. Fortunately, I've had some practice with this lifestyle for awhile now. I spent 10 years as a vegetarian myself and have a lot of 10 minute vegetarian meals in my arsenal from that time in my life. As always, life is busy and being vegetarian doesn't change that.
Here's some of the 10 minute vegetarian meals I relied upon during my stint with that diet.
Roasted Red Pepper and Onion Quesidillas
Keeping nutrition in mind always, I'd use corn tortillas rather than flour. Grate your favorite cheese over the top of the tortilla and add some diced roasted red pepper along with onions or scallions. I've also included things like mushrooms or black olives to this tasty ten minute meal. If you want to amp up the healthy quotient even more, using Greek non-fat yogurt always is a great alternative to sour cream.
Lime Spritzed Mahi Mahi
Start with this healthy vegetarian meal by marinating your Mahi Mahi in a marinade of grated ginger, tamari, 2 juiced limes, a tablespoon of extra virgin olive oil, and some salt and pepper to taste. After 2 hours in this mixture, transfer your tuna steak to a skillet and cook for appoximately 6-7 minutes on each side. Garnish with lemon or red pepper strips.
Sweet Potato with the Works
Rinse a medium sized sweet potato and wipe dry with a paper towel, then poke a few holes around it for cooking. Next, microwave your sweet potato for 5-6 minutes or until tender. Once it's been cooked well enough, slice it down the middle and fill it with some heated black beans and sour cream. Top it with dices of tomatoes and enjoy!
Bowl of Berries
A nice mix of blackberries along with raspberries can be a nice substitute for processed sugar types of desserts. Just combine these two along with some others you may enjoy and drizzle some almond milk over the top to create a nice creaminess to this. If you need a little added sweetness, include some maple syrup over the top.
Vegetarian mealtime can be quick and tasty too with these meal ideas. I still use them today, even though I've incorporated some meat in my diet, just because they're healthy, tasty and quick.
