For Monday breakfast, we had egg with tomatoes, cucumber, carrots with cheese and cucumber, fried banana, bread with cheese spread, and tuna with egg.
And for dinner, we had the left over pancit bihon from Sunday night, plus boiled egg, and crackers. The limes are squeezed to the pancit bihon for added taste. The pancit bihon is made from rice noodles and fried with soy sauce mixed with vegetables and meat. For our recipe, we used tofu in replace of meat.
