Pancakes and Dandelions?!

This morning, breakfast took a wild turn...literally. After seeing @bowentroyer and @thefarmerswife cooking some wild dandelions, we had to try it.

Breakfast today was a nice and simple batch of pancakes that we cooked outside. While we were getting everything prepped, my sun went out and picked a bowl of dandelions.

We got the flowers all cleaned up and then battered them with pancake batter. We tried to cook them two different ways. We cooked some on the griddle with the pancakes, and the other half in a pan with oil.

We found that the ones on the griddle tasted like greens. Maybe a kale taste. It was really good. The ones that were fried tasted more like fried mushrooms.

Up to now we have never actually eaten dandelions, maybe the kids have for fun, but not as part of a meal. I can recall talking with people that would tell me about casually eating dandelions while they hike and take walks.

I am really excited that we took a step toward self reliance. The more we can learn, the more amazing our experiences may be!

We are still learning about all of the nutritional value of dandelions, but from just tasting them....I'm in!

I was shocked too at how good they taste. Our youngest daughter had the idea of dipping them in Ranch. Wow. It was great.

Dang! Ranch! I bet they went down smooth. Yeah we are getting settled. We got here and went straight to work haha. Life is so good and God is so great!
