Dinajpur rice is good. Rice has different names like Katari Bhog, Miniket, Athaish, Paijam etc. About 25 years ago people used to eat coarse rice. The sisters would get up late at night and boil the rice in a big pot. And that paddy is open for two to three days Dry in the yard or on the street. There was and still is a lot of difficulty in drying the paddy. Kathno sunshine, kathno meghla akash, sometimes it rained hard and sometimes it rained for two or three days. The paddy is threshed again. The work of threshing paddy in Dheki goes on all day long. Even today, breaking the paddy of that dheki floats in my eyes.The rice smashed in Dheki was chemical free. At that time the rice of the day was not very shiny but the current rice is more shiny but full of chemicals.

Another name for rice is pantabhat. Fresh rice overnight Panta rice is soaked in water in the morning. Panta rice is burnt in the morning by burning dried chillies and mixed with salt. Even when farmers are busy planting paddy seedlings soaked in rain in the field, panta rice is still available for breakfast and panta rice with roasted dried chillies and salt.
