I will be sharing how to prepare Eba and Egusi soup.

But first, let me tell you what Eba and Egusi soup is:
Eba is a dish that is native to some West African countries, it is gotten from cassava: the cassava is peeled, washed, grounded, drained, and fried till it has a grainy consistency that looks like this:

in this form it is called "Garri".

It is then poured into boiling water and stirred into a solid lump that can be swallowed with any variety of soup.

Egusi soup is a personal favoutite, and is also native to most of West Africa. It is made from the seeds of a species of melon whose name in english I do not know (lol!). The seeds are grounded, and can be used in any number of ways, but we mostly use them for egusi soup.
Bear with me, I didn't take a picture of the raw egusi seeds before cooking.

The Recipe
You will need:
>Egusi seeds (grounded)
>Palm oil
>Ugwu leaf aka "fluted pumpkin leaf" or Spinach (chopped)
>Tomatoes and scotch bonnet peppers (Blended)
>Onions
>Salt, seasoning cubes, and grounded crayfish
>Steamed Meat (Keep the broth from the meat, you'll need it)
>Any smoked fish of your choice

Step1: Put a pot on low heat and pour two laddles of palm oil into the pot, allow it to heat for 30seconds then add your sliced onions, stir and allow it to fry for a few seconds, make sure it dosen't get burnt.
Step2: Add in your blended tomatoes and pepper, stir and allow it to fry for about 2 minutes.
Step3: Add the smoked fish now if you have it, also add every other animal protein (please don't add egg or milk, I beg you.) of choice except the meat.
Step4: Add salt, seasoning cubes, grounded crayfish and other spices to taste. Stir for about a minute and allow to boil for about 2 minutes.
Step5: Add your grounded Egusi seeds, stir for a few seconds then add your meat (without the broth.) stir again and allow it to sit for a minute.
Step6: Add the meat broth, and some water depending on the quantity of soup you want to make, stir it and let it boil for 10 minutes.
Step7: Add your chopped Ugwu leaf (fluted pumpkin leaf) or chopped spinach, stir and allow it to boil for 3 minutes.

This is what it should look like.

To make your Eba, boil some water, pour it into a bowl, gradually pour some garri into the hot water till the water is almost filled with garri, then stir and turn with a spatula till it is ready. You might want to watch a YouTube tutorial on how to make Eba.
