My wife and I realized at about 7pm that we had no idea what we were going to make for supper out of the pork tenderloin that she'd pulled out of our freezer. Most of the recipes we were aware of took a bit of prep time and even longer cooking time, so I decided to pop over to the internet for some inspiration!
It had to be quick and easy to prepare, and have a short cook time, and also be something I could reasonably see my almost-two-year-old boy eating. After a bit of digging, I found one that looked pretty great, and so we decided to take a crack at it.
My boy loves mustard, so when I saw one that took 30m from prep to plate, that also heavily featured mustard... I figured this was a quick win.
As it came out of the oven:
I admit, this photo doesn't look super appetizing per say, but once we'd cut it up and plated it... I think it looks quite a bit more tasty!
