While on a recent trip I went to a restaurant which belongs to my brother's sister in law. She is a good friend of mine and I guess she took extra special care in preparing something special for me and our nephew (he is her sister's and my brother's son).
So she prepared this dish for us, it is quite typical here in Honduras eaten very often at most homes, not so much now that meat has become so expensive. So it is just fried pork ribs, fried beans, fried plantain slices, corn tortillas, cheese some spiced onion with vinegar and some lemon which in Honduras is supposed to neutralize any bad effects from the pork.
It is delicious, and i will agree it has to be full of cholesterol and all sorts of bad things, frankly I don't care, the meat was tender the beans were perfect and the plantain had just the right amount of salt. To finish it off I drank about a liter of Coca Cola so it was a great meal. Here are a couple of pictures:
