I want to share with you a very delicious recipe, made with one of my favorite vegetables, "beet", this is rich in minerals, such as iron, magnesium, calcium, phosphorus, potassium, sodium, zinc and copper, it also contributes to the body vitamin C, thiamine, rivoflavin, niacin, vitamin B6, vitamin E, vitamin K; This wonderful vegetable is ideal for regulating blood sugar, promotes intestinal flow, among other wonderful benefits.
Hence, today I want to make a very easy, inexpensive and delicious recipe, "beet muffins", these are small fluffy cakes with a delicious sweet touch that will be the sensation of your family and friends.
You will need to:
• 1 large grated beet.
• 2 cups of wheat flour.
• 1/3 cup of oil.
• 1/2 cup of sugar.
• 2 eggs, you can substitute them for 1/2 cup of flaxseed water.
preparation:
First, pour the grated beets into the blender with the oil, sugar and eggs or flax water, beat at maximum speed for a minute so that the ingredients are integrated.
Then pour the mixture into a bowl and add the wheat flour little by little, with enveloping movements, until it forms a smooth mixture.
Add portions of the mixture to previously greased Cupcake molds.
Bake for 15 minutes at 180C.
