RUSTIC HICKORY HOT-SMOKED WHITETAIL DEER BUTTERFLIED BACKSTRAP

I love meatcraft!

To celebrate a recent deer harvest, I decided to treat my family (and myself) to some hickory hot-smoked butterflied backstrap. This was a very delicious meal. I built a hot-smoker out of rocks which helps retain heat, limit oxygen, and create a lot of smoldering smoke. This allows for some excellent flavor to be imparted to the meat. After some hours hanging out high above the flame, the meat was ready and so were we! It made a very delicious meal, and we can't wait for the next one. Enjoy the photos!
