Intro



We, Poles, are crazed about soups. Almost every Polish lunch is made of two meals where first plate is soup and the second plate provides proteins in some form. Sometimes soup is all what we serve and believe me, it works equally well to kill the hunger.


Soups warms up, are cheap to prepare and quite dietetic. It's a perfect meal for the cold, winter days. While chicken soup, in some form, is popular all around the world, other kinds are not so common. It surprised me, because there are basically unlimited possibilities - you can prepare that meal of everything you want. I already published before my recipes for mushroom or tomato soup, not time has come for the broccolis. I present vegetarian version although I'll mark in the recipe how to make it with the meat, if you prefer so.

Ingredients (10 plates)


🥦 2 broccolis
🥦 2-3 carrots
🥦 1 kg of potatoes
🥦 2 leeks
🥦 2 onions
🥦 100 -150g of blue cheese
🥦 250 ml of kefir or sour cream
🥦 4-5 stock cubes
🥦 4 garlic cloves
🥦 Salt, pepper, bay leaf
🥦 A bit of butter or olive oil to fry
🥦 Umami seasoning (optional)


Preparation:


1️⃣
Peel and clean the potatoes, carrots and onion. Cut off the green part of the leek. In fact, leek's leaves can be used in the soup, as they are edible too. We used to remove it because they are not as soft as the rest of the vegetable. You can boil the soup with it and remove it before serving the meal.


2️⃣
Cut the onion into pieces. Prepare the stock by boiling the water with stock cubes and add the carrot. Continue boiling it all.
If you are not vegetarian, you can prepare the stock of chicken, beef or any other meat you like. You can also use the chicken soup from the day before.


3️⃣
Cut the potatoes into small cubes and boil it in the salted water in separate pot until it's soft. Boiling potatoes in the soup negatively changes its flavor so I recommend you to do it that way.


4️⃣
Chop the onion into small cubes. Leek cut in half and then chop each half into thin slices. If the onion makes you cry, you can use the fan to get rid of the substances which cause you to react that way. Direct fan into the onion and chop it staying in the opposite to the wind direction. Opening windows help as well.


5️⃣
Fry softly the onion and leek, using the butter, olive oil or any other fat you have. It should have softly golden colour. Try not to burn it.


6️⃣
Add the onion and leek to the boiling soup. Smash or chop into very small pieces all garlic cloves and add it to the soup as well.


7️⃣
Cut the broccolis into small pieces and add to the soup. Leave itto boil for 10 minutes.
Most of the people use only the grean heads of broccoli, throwing away the stems. Stems are edible too though, it just requires more time to cook though. If you don't want to waste it, add it to the soup too - just make sure you chopped it into the small pieces to give it a chance to be boiled on time.

Cut the blue cheese into small pieces and add to the soup. Mix it well - soup should change the colour for a bit lighter and cheese should melt totally.


9️⃣
Add the kefir to the soup. I am using home made kefir (recipe will be published soon, follow me to not skip it). If you don't have it, you can use sour cream or regular cream with the juice from half of the lemon


Soup is ready. Serve hot, with the piece of bread.
